Bison tenderloins star of inaugural luncheon

RAPID CITY, S.D. (AP) -- While most people are talking about President Barack Obama's speech and Michelle Obama's glamorous fashion choices, South Dakotans are buzzing about another inaugural feature: the bison tenderloins the first couple ate.

That's because the meat showcased in Monday's inaugural luncheon was from Rapid City.

Bruce Anderson's Western Buffalo Co. processed the meat and sells buffalo cuts "all over the country." He says the menu was a tribute to the ranchers who raise the bison.

Anderson didn't know the president would be eating his bison until a New York food columnist called him last week.

The Rapid City Journal reports (http://bit.ly/URPOVv ) that Monday's tenderloins were accompanied by red potato horseradish cake, strawberry preserve with red cabbage and butternut squash puree.
